PICKAWAY – Restaurant Inspections for December of 2019 of local restraints and food locations inspected by Pickaway Board of Health Department.

Zanzis Pizza inspection non-critical violations only:

3717-1-02.4(A)(2) / PIC – Manager Certification
During the time of inspection, PIC explained that his ServSafe certification expired and he was in the process of becoming recertified.

3717-1-02.3(A) / Food contamination prevention – eating, drinking, or using tobacco.
Corrected During Inspection Observed employee drink in walk-in cooler next to open bag of bacon. PIC removed.

3717-1-04.4(A)(3) / Equipment – cutting or piercing parts of can opener not maintained.
Observed slicer starting to chip and can opener blade with debris.

Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed lettuce and cabbage in walk-in cooler without dates. PIC discarded both items.

Critical Corrected During Inspection Observed sanitizer spray bottle stored above wing sauces on shelving near walk-in cooler. PIC moved spray bottle to bottom shelf.

Corrected During Inspection Working food containers not properly labeled. Observed container of bread crumbs without label. PIC made label during inspection.

Critical Corrected During Inspection Observed sanitizer bucket inside handwashing sink. PIC quickly removed bucket once observation was made

Non-food contact surfaces of equipment are unclean. Observed an accumulation of grease and other debris on vents above fryer

Observed cold holding equipment thermometer was missing where chicken salad and other cold salads are stored.

Critical Corrected During Inspection Observed quaternary ammonium sanitizing solution at incorrect concentration (<150ppm).
Sanitizer concentration shall be at manufactures effectiveness recommendation (250-400ppm).

Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. Observed sliced turkey, sliced ham, and sliced tomatoes at 44.8°F, 43°F, and 44.9°F respectively. PIC discarded meats and tomatoes.

Critical Utensils and food-contact surfaces of equipment not sanitized at the required frequency. Observed an accumulation of dust and damaged items stored for store credit inside sanitizing sink of the 3-compartment sink. When asked about the equipment washing procedure, PIC was not confident that the equipment/utensils were being sanitized after washing and rinsing.
Utensils and food-contact surfaces of equipment shall be sanitized before use after cleaning.

Critical Corrected During Inspection Observed individual bottles of milk and two 1 gallon milk cartons past manufacturers sell by date on shelves for sale. PIC Kayla removed these items at the time of inspection.

Observed ice cream cooler used for overstocked TCS foods and soda walk-in cooler thermometer were missing.

Critical Corrected During Inspection Food employee(s) did not wash hands when required. Observed employee use cash register without gloves, then proceeded to put on a new pair of gloves without washing his hands.
Food employees shall clean their hands and exposed portions of their arms before donning gloves to initiate a task that involves working with food.

Increase cleaning frequency and be sure to clean under shelves and other fixtures where food items may have fallen.

Critical Corrected During Inspection Ice being used for food after it was used as a coolant. Observed employee bottled soda stored in ice bin behind bar.
Because the ice at the bar is used in customer drinks, it is considered a food. Ice may not be used as an exterior coolant and then used for food. Store employee drinks in designated areas.
